For the 2008 season along with our CSA we are going to start a farm to chef program. The produce supplied would be grown naturally.

 

The goal of this program would be to provide a predetermined amount of produce for a restaurant to use in a daily or weekly special item.

 

For example; a local restaurateur wants to include a side with Salsa Verde but cannot find quality tomatillos to use. With enough advance notice we can plant what the chef needs in the spring and have the harvest date planned out to within a few weeks. This type of cooperation is beneficial for both sides when growing niche items in particular.

 

This program will not be limited, however, to hard-to-find produce. Regular deliveries of fresh and ripe produce can be planned out months ahead of time. Hand picked herbs or very ripe tomatoes, which could not be shipped far, could be hand delivered in the morning to your restaurant's kitchen door.

 

This is a pilot program, so we are looking to develop relationships with two or three local businesses interested in Alternative Agriculture.
